Within a theme, a user is able to set the grub title to any string. However, if you are constrained to a system where running a theme isn't possible (display over serial for example) then the title is hard coded to the GRUB version string. I have attached a patch that permits the user to change the title string by setting an environment variable called 'title' (the default is still to display GRUB version string). Documentation patched as well.
