Corresponding source code
svn rev 2068 did add a parttool command which you can use to hide partitions.
To the UUIDs: Well you don't have to use them, grub-mkconfig/update-grub generates always `set root="(hdx,y)"' along with the `search --fs-uuid' line.
And for the kernel root= option you can set `GRUB_DISABLE_LINUX_UUID=true' in /etc/default/grub and then rerun update-grub/grub-mkconfig.
