Thank you for the report.  Does this crash also happen in Octave 6.3.0 if you have the time to upgrade your installation?

In the Octave 6.3.0 release notes

there are several fixed GUI crashes.  Maybe the triggered crash was among them? 🤔

In the command window, launch a lengthy computation function or script ( several minutes )
While the command executes, edit the source files
Save the edited files ( Octave accepts the file save commands but does not write to file while the commands are running )
Abort the command line interpreter (Ctrl-C)

Outcome :
Octave exits and edit session is lost.
