I have noticed that TeXmacs italicizes all the texts in the definition environment. However, it seems customary to italicize only the terms to be defined, not the totality of the text. LaTeX does that implicitly (of which the "definition" theorem style renders the text roman). This, however, seems to be a much more historic tradition than LaTeX. In fact, I see that most early textbook or paper do italicize the theorems, propositions and axioms, say, but not definitions.
Examples:
1. Foundations of Algebraic Topology (1952), by Eilenberg and Steenrod
2. The Topology of Fibre Bundles (1951), by Steenrod
3. Formes Différentielles (1967), par Henri Cartan
4. Homotopy Theory (1959), by Hu
There are even much earlier examples:
5. Introduction to Infinitesimal Analysis (1907, http://historical.library.cornell.edu/cgi-bin/cul.math/docviewer?did=00420002&view=50&frames=0&seq=5), by Veblen and Lennes
Some with implicit definition environments:
6. Anaysis Situs (1895, http://gallica.bnf.fr/ark:/12148/bpt6k4337198/f7.image), par Henri Poincaré
7. Cours d'analyse mathématique (1910, https://archive.org/details/ed2coursdanalyse01gouruoft/), par Goursat
I propose to offer a package which renders the main text of definitions roman and in particular, amsart document style should load this package.
