The good news is that it works great using the FSF's Jitsi
instance (thank you for hosting that---it is a wonderful
idea).  Unfortunately, it looks like Jitsi doesn't recognize IceCat's
user agent, and the message saying that the browser is unsupported is
barely visible and overlaid atop of the body of the website.

That'd be a simple CSS fix (the class is
`.unsupported-desktop-browser`), but a better fix would be to modify
Jitsi to recognize IceCat's User Agent, especially since it's GNU's
browser.

My user agent, using the version of IceCat packaged in Guix, is:

  Mozilla/5.0 (X11; Linux x86_64; rv:78.0) Gecko/20100101 Firefox/78.0

It works fine if I spoof my user agent.
