To extract files with extended attributes --xattrs --xattrs-include='*' needs to be passed to tar, otherwise the extended attributes present it the tarball are silently ignored.

This may lead to accidentally loosing extended attributes when extracting root filesystems and in general violates the principle of least astonishment by silently ignoring data.

The problem was originally reported at:
https://bugs.launchpad.net/ubuntu/+source/tar/+bug/1785291

Extracting extended attributes should be safe and the only related problem I know of is fakeroot not supporting it yet, but this probably does not affect a lot of users:
