The bindings were restored in the git source on 29 Jun 2014.
See http://git.savannah.gnu.org/cgit/gv.git

The changes are in gv/src/gv_misc_res.dat  If you can not rebuild the executable, you can still modify the bindings by adding them to $HOME/.gv

The bindings of mouse buttons 1 and 2 seem to have been unintentionally swapped in gv version 3.7.4 (as the documentation still reflects the old behaviour).
