The sender address is supposed to be the same as the email login name in a standard email configuration. You can check the "custom settings" box and override this behaviour, but you have enter the login name and password there too.

For justification, in Outlook+Exchange you have no options at all to provide a sender address other than what the echange admin sets for you.

When I try to change the sender e-mail address, the changes seem not to be saved. If I check the preferences a second time, the address is again the automatically generated one: <login>@<default-domain-set-by-admin>. This breaks setups where the sender address is different from the login name.

I played around a bit more and found out, that if you create a second e-mail account the sender address IS saved for this second account. But still not for the first.
