Using a btrfs filesystem as root fs it should be possible to roll back.
This is done via btrfs-progs:

> btrfs subvolume set-default subvol path

But there is a script in grub that overrides the subvolume, so default-subvolume does never take effect: util/grub.d/10_linux.in

This problem is also discussed in this forum - most important the last post from Jul2024:

When I comment out the lines for 'xbtrfs' in the script, it works fine.
So, at least, when the current subvol is the default subvol, then it should not be overwritten.
