A voice in this context is a staff which will typeset on the staff above. To delete it you just use Staffs/Voices->Delete Current Staff as with any other sort of staff (e.g. Dynamics Line, Tab, Chord Symbols ...)

perhaps that could be made clearer?

Once a voice has been created, to delete it you have to
convert to staff and delete that
or
use staff delete (which, provided the cursor is in the voice, does delete the staff.
A Voice delete command would be simpler.
