OK, I tracked this down, when enabling other things (JACK in particular I think) evince can get unset. I've fixed this now in configure.ac
The fix is commit

fca62f292328bcd5a588a01d9ac5c226a17dd64a

in the master branch. The previous fix is still needed for those that want to build Denemo without evince (e.g. non-interactive use, automated testing)

Oh, sorry about the stray }, I've fixed that now.

From what you say you have built Denemo without evince - you can, as you discovered export PDF and so get a typeset score. However, you are missing features such as pointing to places in the typeset score and the Denemo cursor moving there (easier to see the place you want on a properly typeset score) and re-shaping slurs, dragging rehearsal marks etc. Not to mention typesetting the current part or the whole score at a click.

If you are building by executing make I think you may be able to do

make -DUSE_EVINCE
to get it build properly. But really this be automatic. I see you have all sorts of enables set up. Are you able to do just plain

./configure && make && make install

as that is what I use. That is, I can only think that one of the flags passed to configure is somehow disabling evince.

The patch as-is does not even build: there is a rogue "}" in the line right before the final "#endif".

However, after removing the offending line, denemo builds fine and I can actually make a PDF from a simple score I typed in it
(File - Export As - Export PDF; I cannot find under View menu the Typeset and PDF item...).
Attached the resulting file.

As for the "real" culprit: I don't know much of evince & Co., nor I am very fond of the autotools intricacies...
Perhaps is some file lacking a needed guard or define?

from this I gather the real problem is unresolved, I just hope the build that resulted gave a useful program - to check, you need to actually generate a PDF of music notation (via View->Typeset and PDF)

From the log you attached it seems you had --enable-evince in the configure and yet the flag USE_EVINCE is undefined during the build.
There is a bug in the code which means that without USE_EVINCE set the two symbols you mention are not defined. I have fixed this by adding stubs for them and this is now checked into master. However: the resultant build (with evince disabled) is only of real use for the test suite, So for your purposes it would be good to dig deeper:
There was a very similar bug report not very long ago, This was another case where the build without evince was failing - the bug you have uncovered is more recent.
So it would pay to find out what the resolution to that bug was. I don't understand how the configure flags get translated into the defines that are tested inside the C code so I can't say for sure what is going on.

But, for sure you need USE_EVINCE to be defined during compilation if you want to build Denemo for real users.
