You should as os-prober maintainers to add support for it. grub-mkconfig has no knowlegde about it, it simply creates menu entries from opaque strings returned by os-prober.

FYI openSUSE added support for btrfs subvolumes to os-prober. You may want to look at their patches.

It'd be nice if `grub-mkconfig` would be able to recognize all (Linux) OSs (Debian-based, Gentoo-based, etc.) on all btrfs subvolumes and treat them/add menu entries as if they were recognized on other partitions (using the `rootflags` option with an appropriate `subvol` entry).
