It's problem with your firmware. Not much GRUB can do about it. Since it's just cosmetic, closing it.

My Grub boot screen seems stuck in 1024x768 and will not change despite my grub.cfg asking it to use either '2540x1440' or 'auto.'

If I enter commandline mode the output of videoinfo is:

The system is using an Intel i7-3770K with onboard video via the display port (this is an Intel HD 4000). The monitor is a 2650x1400 native display that works just fine when I am booted into X at that resolution. The problem seems localized to the Grub boot screen.
