As far as I can find, there is no way to configure terminfo options in /etc/default/grub. I had to add "terminfo serial -g 80x24 vt100" to /etc/grub.d/40_custom then re-run update-grub to get serial console support to print the menu over serial.

The command you wrote is implied (there was a bug in previous version that it wasn't). Terminals which don't match this description (vt100,80x24) are relatively rare. Decreasing the priority
