Thanks for the suggestion.
I've fixed that in CVS doc/coreutils.texi.
Here's how it reads, now:

Backslash escapes
The following backslash escape sequences are recognized:

`\a'
Control-G.
...

While a backslash followed by a character not listed above is
interpreted as that character, the backslash also effectively
removes any special significance, so it is useful to escape `[',
`]', `*', and `-'.

The documentation for tr does not state which characters are considered to be special. In particular, it doesn't mention that
"-" is special (yes, I know it should be obvious because it is in a range), and the \- is NOT included in the list of backslash-escapable items (in man tr).

I think that a line on:
tr considers the following characters to be special: -*[]
would be helpful
