This may be an irrational desire but I wondered if there was a way to specify TWO sets of options on one tar command?

For example, I'd love - in one command - to be able to bundle AND compress (-z) the contents of a directory which was mostly symlinks WITH the contents of the same directory but this time dereferencing the symlinks.

Performing the above using two distinct operations (using -c for the first step and then -u for the second) means I can't simultaneously use -z, requiring a third step to gzip the tar ball.

Obviously I'm being lazy and could bundle the three steps into one shell script, but I'd love to be able to run something like...

tar -cvzf ~/test.tar.gz !-h -P /dir1 -h -P /dir1

Maybe I can do this but am just didn't know it?
