keystatus is documented in manual they way how it's used in Ubuntu is Ubuntu-specific and hence its documentation wouldn't belong to upstream manual.

seems that holding shift is customized by /etc/grub.d/xx-script:

if keystatus --shift; then
set timeout=-1

Ubuntu wiki for example have complicated scenario to get menu:

Main solution is to hold Shift (or Esc) button pressed after BIOS actions.

I search "info grub" for hold/shift/esc keywords - and doesn'r find anything relevant.

Please add docs about such behavior!
