Please add a sentence in the grub-reboot --help output and manual page mentioning that rebooting submenu items requires a special syntax, something like this:

This also applies to grub-set-default.
Also, using > as the submenu separator is problematic, as you have to quote it or escape it with a backslash to prevent the shell from interpreting it as a redirection. Any documentation update should clearly mention that quoting is required.
Ideally, it should be : or . or something else that doesn't require quoting.
