I think the command you are referring to is this one:

Command: Simulate MIDI
Makes the second and third rows of the pc-keyboard behave like a MIDI piano keyboard: asdfg... creates the scale from Middle C, while the qwerty row provides sharps/flats (with gaps). To customize these key assignments for your keyboard use Ctrl-Esc. Tab key toggles chord entry off/on. PgUp key starts entering notes an octave higher, PgDn an octave lower. Use with rhythm entry for MIDI in checked in preferences.

If this is right then setting more than the 20 notes c''-g'' would require editing the script (right-click the command menu item and choose "Get Script into Scheme Window" to see the script to edit.
Your second idea is (sort of?) there already - you press PgUp and PgDn to shift the range by an octave.
If you wanted to modify the script, I can help you with that (use mailing list), as it looks quite intimidating but I can see the relevant lists that would need modifying - the tricky bit would be coming up with a exact plan of what you want Denemo to do.

I love the simulated MIDI keyboard, thank you so much for that.
But I would like to set more notes for it, the same way you can make new customised keyboard shortcuts, only I couldn't find that feature. I would happily ditch all shortcuts from the keyboard - only while in sim. MIDI mode, of course - so I could use all four rows for two octaves.

Alternatively, could there be 2-key shortcuts in simulated MIDI mode, so by pressing ,-[key] or '-[key] you would get the note one octave down or up from the middle?
